Stuffed Baked Potatoes - cooking recipe

Ingredients
    2 large baking potatoes
    2 Tbsp. butter
    2/3 c. Cheddar cheese
    1 Tbsp. chives (optional)
    salt and pepper to taste
    3 bacon slices, cooked and crumbled
    sour cream
Preparation
    Bake potatoes until tender and skins are very crisp, about 1 1/4 hours.
    Cut potatoes in half lengthwise and scoop out centers into bowl.
    Add butter and mash until smooth.
    Fold in cheese, sour cream, chives, salt, pepper and bacon.
    Mound mixture in potato shells and bake another 15 minutes.
    Serves 4.
