Artichoke Rice Salad - cooking recipe
Ingredients

1 pkg. chicken flavored rice mix
4 green onions
1/4 to 1/2 green pepper, chopped
12 sliced green olives
2 (6 oz.) jars marinated artichoke hearts
1/2 to 2/3 tsp. curry powder
1/2 c. mayonnaise
Preparation

Cook rice according to package directions.
Drain artichoke hearts, saving juice.
Add onions, pepper, olives and artichoke hearts, all chopped or sliced.
Combine mayonnaise, curry powder and juice from artichoke hearts.
Stir into rice mixture.
Serves 6.
