Gourmet Potatoes - cooking recipe

Ingredients
    6 medium potatoes
    2 c. shredded Cheddar cheese
    1/4 c. soft butter
    2 c. sour cream (room temperature)
    1/3 c. chopped green onions
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. butter
Preparation
    Cook potatoes in their skins.
    Cool, peel and shred coarsely. Put cheese and 1/4 cup butter in pan over low heat and stir until cheese melts.
    Take from heat and add the sour cream, onions, salt and pepper.
    Stir.
    Fold the potatoes into the cheese mixture. Spoon the potato-cheese mixture into a 2-quart greased casserole dish.
    Dot with 2 tablespoons butter.
    Bake, uncovered, at 350\u00b0 for 25 minutes.
