Ingredients

1 c. butter or shortening
2 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. quick cooking rolled oats
2 c. flaked coconut (optional)
Preparation

Combine butter and brown sugar and beat well.
Add eggs and vanilla and beat again.
Combine flour, baking powder and soda and salt and add to mixture.
After mixing, add oats and coconut, if desired.
Bake in a 375\u00b0 oven approximately 10 to 12 minutes.
