Tater Crisp Fried Fish - cooking recipe
Ingredients

2 lb. fresh/frozen perch fillets
1/4 c. grated Parmesan cheese
1/2 c. oil
2 eggs
1 c. Hungry Jack mashed potato flakes
2 tsp. oregano leaves
salt and pepper
Preparation

Rinse fillets under cold water; pat dry.
In a shallow dish, beat eggs.
In another shallow dish, combine potato flakes, Parmesan and oregano.
Dip fish fillets in egg.
Coat fish with potato flakes mixture.
