Ingredients

1 eggplant
1 c. flour
1/2 tsp. salt
1 egg
1 c. milk
1 Tbsp. cooking oil (more, if needed)
Preparation

Cut eggplant in half lengthwise.
Slice 1/2-inch thick.
Soak in ice water 30 minutes.
Prepare batter ingredients.
Dip in batter.
Fry 2 to 5 minutes.
