Green Pepper Relish - cooking recipe
Ingredients

5 sweet green peppers
5 sweet red peppers
5 medium onions
1 Tbsp. salt
1 c. heaped sugar
1 c. vinegar
Preparation

Grind the peppers and onions into small pieces using a food grinder.
Add the salt and let mixture stand overnight.
In the morning, drain well and add the sugar and vinegar.
Cook the mixture 20 minutes or longer until the vegetables are soft and tender.
Spoon cooked relish into hot sterilized 1/2 pint jars. Cover with lids and process 5 minutes in hot water bath.
Remove from the water and let cool 24 hours before storing.
