Stir-Fried Broccoli And Beef - cooking recipe

Ingredients
    2 tsp. dry sherry
    1/8 tsp. black pepper
    2 tsp. soy sauce
    1/2 tsp. salt
    1/2 tsp. sugar
    2 tsp. cornstarch
    1/4 c. peanut oil
    3/4 lb. broccoli flowerets, stalks cut diagonally into 1/4-inch slices
    1/2 lb. flank steak, cut in thin slices across grain and cut into 1 1/2-inch strips
Preparation
    Mix first 5 ingredients and 1/2 cup water.
    Set aside.
    Mix cornstarch with remaining 1/4 cup water; set aside.
    Heat 2 tablespoons oil in uncovered wok at 300\u00b0.
    Add broccoli stalk slices, cover; cook 2 minutes.
    Add flowerets; cover, cook 2 minutes or until tender-crisp.
    Remove broccoli to hot platter. Add remaining 2 tablespoons oil to wok; heat at 375\u00b0.
    Add meat; stir-fry 1 minute.
    Add soy sauce mixture; stir-fry 2 minutes. Return broccoli to wok; mix.
    Add cornstarch mixture.
    Stir until slightly thickened.
    Serve immediately.
