Country Potato Salad - cooking recipe

Ingredients
    2 medium potatoes (about 3/4 lb.)
    1 carrot, peeled and diced
    1 Tbsp. red wine vinegar
    1/2 Tbsp. lemon juice
    3 Tbsp. corn oil
    1 tsp. water
    1 egg, hard-cooked and diced
    1 Tbsp. onion, chopped
    1 medium dill pickle, chopped
    1/4 c. fresh parsley
    salt and pepper to taste
Preparation
    Wash potatoes; place in a pot of cold water.
    Cover and boil for approximately 20 minutes, or until soft.
    (Or, the potatoes can be microwaved in 1/4-inch water for 10 minutes until soft.) Halfway through the cooking, add the carrot.
