Leek And Potato Soup - cooking recipe
Ingredients

6 Tbsp. butter
3 c. leeks, minced
3 Tbsp. flour
4 c. water
1 Tbsp. salt
pepper
4 c. potatoes, diced
4 c. milk, warmed
1/2 c. heavy cream
3 Tbsp. butter
chives or chopped parsley
Preparation

Saute leeks in butter 5 minutes.
Blend in flour and cook 2 minutes.
Gradually blend in water.
Add salt, pepper and potatoes; bring to a boil.
Reduce heat and simmer 40 minutes, partially covered.
Add milk; bring to a simmer.
Blend in cream. Turn off heat and add butter.
Garnish with chives or parsley.
