Two-Step Batter Fried Chicken - cooking recipe

Ingredients
    1 c. flour
    1 tsp. baking powder
    1/2 tsp. salt
    1 egg, slightly beaten
    2/3 c. milk
    1 fryer chicken, cut up
    1 qt. corn oil
Preparation
    Sift together the dry ingredients.
    Mix egg, milk and 1 tablespoon corn oil.
    Add to flour mixture and beat.
    Dip chicken into batter, coating completely. Drain.
    Pour corn oil into deep fryer or 3-quart saucepan.
    Heat oil to 375\u00b0.
    Carefully add chicken, a few pieces at a time. Fry about 4 minutes; drain. Place in a shallow baking pan and bake in a 350\u00b0 oven about 30 minutes or until tender.
    Makes 4 servings.
