Ingredients

8 medium potatoes, peeled, cooked and coarsely diced
1 tsp. salt
1/2 tsp. pepper
1/4 c. wine vinegar
1/2 c. olive oil
2 Tbsp. beef consomme
2 Tbsp. dry white wine
1/2 Tbsp. dried tarragon
1 or 2 Tbsp. chopped fresh parsley
Preparation

Put potatoes in serving bowl.
Mix all other ingredients very well, then drizzle over potatoes.
Gently stir until all potatoes are covered with dressing.
May be served warm or cold.
Makes 4 to 6 servings.
