Coconut Cookies - cooking recipe

Ingredients
    1/3 c. margarine
    1 c. sugar
    1 egg
    1 tsp. coconut extract
    1 pkg. Martha White SpudFlakes (2 oz.)
    1 (5 1/2 oz.) pkg. Martha White Bix-Mix
Preparation
    Preheat oven to 375\u00b0.
    Cream margarine and sugar together until light and fluffy.
    Add egg and coconut extract; beat well.
    Stir in SpudFlakes and Bix-Mix.
    Shape dough into 3/4-inch balls; arrange 2 inches apart on ungreased baking sheet.
    Bake for 12 to 14 minutes or until golden brown.
    Cool on wire racks.
    Makes about 4 dozen.
