Cooked Rice - cooking recipe

Ingredients
    1 qt. long grain rice, cooked
    1/2 c. carrot, diced
    2 Tbsp. soy sauce
    2 eggs, beaten with 2 Tbsp. water
    1/4 c. green onion, chopped
    2 Tbsp. peanut oil or salad oil
    1/2 c. green peas
    1/2 Tbsp. pepper
    2 Tbsp. salad oil
Preparation
    Saute carrot and peas in hot oil in a skillet for 3 minutes. Add rice, soy sauce and pepper.
    Stir and cook for 2 minutes. Remove from heat; set aside and keep warm.
    Pour egg mixture in hot oil in a skillet to make thin egg pancake over medium heat. Remove to cutting board.
    Cut egg pancake into thin strips.
    Add to rice; mix well.
    Sprinkle with green onion over fried rice. Serves 4 to 6.
