Fettuccine A La Didi - cooking recipe

Ingredients
    1 to 1 1/2 lb. fettuccine
    splash of olive oil
    2 Tbsp. butter
    2 cloves garlic, crushed
    1 lb. frozen chopped spinach, thawed and drained
    1 1/4 c. light cream
    pinch of grated nutmeg
    salt and pepper to taste
    2/3 c. freshly grated Parmesan cheese plus some extra to serve
Preparation
    Cook fettuccine in water and olive oil until it is tender. Set aside.
    Melt butter in a frying pan and saute garlic, 1 to 2 minutes; then add spinach.
    Cook over medium heat for 5 minutes, stirring frequently, until moisture has evaporated.
    Add cream and nutmeg; season with salt and pepper.
    Toss in the fettuccine and Parmesan cheese; stir and cook for a final minute.
    Serve with extra Parmesan cheese.
