Mexican Cornbread - cooking recipe

Ingredients
    2 1/4 c. meal mix
    1/4 c. sugar
    1/2 c. egg substitute or 4 egg whites
    1/2 c. unsweetened applesauce
    1 (8 1/2 oz.) can creamed corn
    1/2 tsp. crushed red peppers or two jalapeno peppers, diced
    1/4 c. onion, diced
    1/4 c. red pepper, diced
Preparation
    Mix in bowl the egg, applesauce, corn, peppers, onion, jalapeno peppers and sugar.
    Add corn mix.
    Stir just until blended (mixture will be thick).
    Pour into hot greased iron skillet.
    Bake at 375\u00b0 in preheated oven for 45 to 55 minutes. Insert toothpick in center. Bread is done when toothpick comes out clean.
