Fried Zucchini(Serves 4) - cooking recipe

Ingredients
    2 zucchini, scrubbed and cut into 1/4-inch thick slices
    1 tsp. salt
    2 eggs, beaten slightly
    1/4 tsp. Dijon mustard
    3/4 c. flour
    1 1/2 c. Italian bread crumbs
    1/2 c. vegetable oil
Preparation
    In a colander, toss zucchini with salt.
    Let drain for 15 minutes.
    Pat dry.
    In a bowl, whisk together eggs and mustard. Dip zucchini slices in flour, then egg mixture, then bread crumbs. Fry in vegetable oil until golden brown.
    Sprinkle with salt and pepper to taste.
    Drain on paper towels.
