Zucchini Beef Skillet - cooking recipe

Ingredients
    1 lb. ground beef
    1 c. chopped onion
    3/4 c. chopped green pepper
    1 clove garlic, minced
    1 1/2 tsp. salt
    1/4 tsp. black pepper
    1 tsp. chili powder
    5 c. zucchini or summer squash
    2 large tomatoes (peeled and chopped)
    1 1/4 c. whole corn
    2 Tbsp. chopped pimento
    1/4 fresh parsley (chopped)
Preparation
    Saute beef, onion, green pepper and garlic in 12-inch skillet until well browned.
    Add remaining ingredients.
    Cover and simmer 10 to 15 minutes or until vegetables are tender.
    Makes 6 servings.
