Ricotta Creme - cooking recipe
Ingredients

1 lb. Ricotta cheese
1/2 c. confectioners sugar
1 tsp. grated orange rind
2 Tbsp. dark rum
1 Tbsp. instant Espresso
1/4 tsp. cinnamon
1 tsp. vanilla
6 oz. chocolate bits
Preparation

Place Ricotta in a fine strainer and drain the liquid.
Place all ingredients in food processor or blender and blend just to combine.
Spoon mixture into parfait glasses.
Chill.
Garnish with a fresh, thinly sliced orange ring and a sprig of fresh mint.
