Potato Cake With Peanut Butter Frosting - cooking recipe

Ingredients
    2 c. sugar
    1 c. shortening
    1 c. mashed potatoes
    4 eggs, separated
    2 c. all-purpose flour
    3 Tbsp. cocoa
    2 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    3/4 c. milk
Preparation
    Cream sugar and shortening in mixing bowl.
    Stir in potatoes, then egg yolks.
    Sift in flour, cocoa, baking powder, cinnamon and nutmeg; add milk.
    Without prior beating, beat in egg whites. Continue beating well for at least 5 minutes or until batter is smooth.
    Grease 3 (9-inch) layer pans.
    Turn mixture evenly into 3 pans and bake in preheated 350\u00b0 oven for 20 minutes or until done. While cakes are cooling on wire rack, make Peanut Butter Frosting.
