Baked Lemon Pudding(Low-Fat, Low Sugar) - cooking recipe

Ingredients
    2 egg yolks
    1 c. skim milk
    1/2 tsp. grated lemon rind
    3 Tbsp. fresh lemon juice
    1/2 Tbsp. margarine, melted
    2/3 c. sugar, divided
    1/2 c. plus 1 Tbsp. flour
    1/4 tsp. baking powder
    1/8 tsp. salt
    2 egg whites (room temperature)
Preparation
    You will need vegetable cooking spray.
