Chili Cheddar Cornbread - cooking recipe

Ingredients
    2 c. yellow cornmeal
    1/2 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. sugar
    1 1/4 tsp. salt
    2 1/2 c. milk
    2 tsp. shortening or oil, melted
    1 tsp. minced onion (dried)
    1 c. shredded Cheddar cheese
    1 (8 3/4 oz.) can whole corn, drained
    1 (4 oz.) can green chili peppers, seeded, rinsed and chopped
    1/4 c. red peppers
Preparation
    Mix cornmeal, flour, baking powder, sugar and salt together. Add milk, eggs and shortening.
    Mix together.
    Add onion and let stand 5 minutes.
    Fold in cheese, corn, green chili peppers and red peppers.
    Spoon about 1/3 cup batter into greased and floured 2 1/2-inch muffin cups.
    Bake at 375\u00b0 for 25 to 30 minutes.
    Makes 15 muffins.
