Chinese Pork Dumplings - cooking recipe

Ingredients
    10 medium dried black mushrooms
    1 lb. ground pork
    1/2 c. finely chopped canned bamboo shoots
    1/4 c. finely chopped green onions (with tops)
    1 egg white
    2 Tbsp. cornstarch
    1/4 tsp. white pepper
    40 wonton skins
    1/8 tsp. sesame oil
    2 tsp. salt
    1/2 tsp. sesame oil
    1/4 c. light soy sauce
Preparation
    Soak mushrooms in warm water until soft, about 30 minutes; drain.
    Rinse in warm water; drain.
    Remove and discard stems; chop caps finely.
    Mix mushrooms, pork, bamboo shoots, green onions, egg white, cornstarch, salt, 2 teaspoons soy sauce, 1/2 teaspoon sesame oil and the white pepper.
