Excellent Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    3 c. sugar
    1 c. vegetable oil
    2 c. zucchini, grated (unpeeled)
    1 Tbsp. vanilla
    3 c. all-purpose flour
    1 Tbsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    1 c. chopped nuts (optional)
    1 c. raisins (optional)
Preparation
    Beat eggs for 2 minutes until light and foamy (speed 4 or medium).
    Add sugar, vegetable oil, zucchini and vanilla.
    Turn mixer on Stir speed (low) and mix until well blended, 1 minute. Stir all ingredients together.
    Add dry ingredients to
    bowl, use Stir speed for 1 minute.
    Add nuts and raisins (optional).
    Grease two loaf pans (8 1/2 x 4 1/2 x 2-inches).
    Bake at 350\u00b0 for 1 hour.
