Forty Cloves Of Garlic Chicken - cooking recipe

Ingredients
    2 Tbsp. butter
    1 Tbsp. olive oil
    1 (3 lb.) chicken, cut up
    40 garlic cloves (unpeeled)
    2 Tbsp. lemon juice
    1/2 tsp. dried thyme
    1 tsp. salt
    1/4 tsp. freshly ground pepper
Preparation
    Preheat oven to 350\u00b0.
    In a large Dutch oven, melt butter in olive oil.
    Add chicken and cook, turning until golden, 5 to 10 minutes.
    Tilt pan and spoon off all but 2 tablespoons fat.
    Add garlic and stir to coat.
    Sprinkle with lemon juice, thyme, salt, pepper and 1/4 cup water.
    Cover tightly and bake for 1 1/2 hours.
