Sweet Potato Surprise - cooking recipe

Ingredients
    3 c. cooked, mashed sweet potatoes
    1/2 c. sugar
    3/4 c. coconut
    1/4 to 1/2 c. thin cream
    1 egg
    1/2 tsp. salt
Preparation
    Add potatoes and cream.
    Be careful not to use too much cream. Add sugar, salt, beaten egg and coconut.
    Let stand until cool. Press a marshmallow into the center of a portion of potato mixture and form into a ball.
    Roll in bread crumbs and fry in deep oil. Drain on paper towels and serve while still hot.
