Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 medium onion, chopped
    1 c. milk
    1 c. Cheddar cheese
    salt and pepper to taste
    20 to 24 saltine crackers, crushed
    2 eggs
Preparation
    Cook eggplant, drain, combine with onions, milk, 3/4 cup cheese, salt, pepper and crackers.
    Put in greased casserole and top with 1/4 cup cheese.
    Beat eggs with fork and pour over top of casserole.
    Bake at 350\u00b0 for 30 minutes or until light brown.
