Cabbage Soup - cooking recipe
Ingredients

1 large onion, sliced thin
2 carrots, scraped and diced
2 stalks celery, diced
2 to 3 c. finely shredded cabbage
4 c. water
1 1/2 tsp. salt
1/4 c. margarine or butter
2/3 c. instant mashed potato flakes or rice
grated Parmesan cheese (optional)
1 (15 oz.) can evaporated milk
1/4 to 1/2 tsp. pepper
Preparation

Cook vegetables in the water until tender.
Stir in all remaining ingredients except cheese.
Cook until thoroughly heated.
Servings of soup may be sprinkled with cheese.
Serves 6.
