Pumpkin Stew - cooking recipe
Ingredients

2 Tbsp. vegetable oil
2 onions, diced
2 cloves garlic, crushed
1/2 c. tomato sauce
1/2 c. water
1 c. frozen corn
1 tsp. salt
1 c. frozen peas
4 medium potatoes, sliced in wedges
16 oz. can pumpkin
1 c. skim milk
3/4 c. grated Gruyere cheese
Preparation

Saute onion and garlic in oil; add tomato sauce, water, corn, peas and salt. Simmer 10 minutes. Add potatoes, pumpkin and milk. Simmer at lowest possible temperature for 45 minutes to 1 hour. Serve with grated cheese. Also good served over white rice.
