Fresh Apple Cake - cooking recipe

Ingredients
    3 c. chopped apples
    1 c. Wesson oil
    2 c. sugar
    2 1/4 c. self-rising flour
    1 c. pecans or coconut
    1 tsp. vanilla
    3 eggs
Preparation
    Beat eggs.
    Add sugar and beat well.
    Add oil, then vanilla. Mix flour and apples with this.
    Bake 1 hour at 325\u00b0 in loaf pan or large flat pan.
    While still hot, pour Buttermilk Icing on it, punching holes to allow icing to seep in.
