Tomato Potato Soup - cooking recipe

Ingredients
    1/2 onion, finely chopped
    vegetable oil
    1/4 c. tomato paste
    1/4 tsp. garlic powder
    4 c. water
    2 large potatoes, diced
    1/2 tsp. oregano
    1 tsp. salt
    1 c. grated Monterey Jack cheese
Preparation
    Saute onion in oil until soft.
    Add tomato paste, garlic powder and water and bring to a boil.
    Add potatoes and simmer until soft.
    Add oregano and salt.
    Just before serving, stir in cheese.
    Serve in mugs for a special treat.
    Serves 7.
