Pineapple Upside-Down Cake - cooking recipe

3 Tbsp. butter
1/2 c. brown sugar, packed
7 pineapple slices, well drained (save juice)
1/3 c. softened butter
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. pineapple juice liquid
Preparation

Preheat oven to 350\u00b0.
Melt butter (3 tablespoons) in a 9-inch layer pan in oven.
Sprinkle brown sugar over butter.
Arrange fruit in sugar mixture in pan.
Mix 1/3 cup butter with sugar until creamy.
Add egg and vanilla.
Beat well.
Mix flour, baking powder and salt thoroughly.
Mix pineapple juice into creamy batter. Spread batter over fruit in the pan.
Bake at 350\u00b0 for 35 to 40 minutes.
Cool a few minutes in pan (so topping doesn't run). Loosen cake from sides of pan.
Place service plate over pan and turn over.
