Portuguese Fish Chowder - cooking recipe
Ingredients

1/2 c. salt pork cubes (small)
1 c. chopped onions
3 c. diced potatoes
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. saffron
1 Tbsp. vinegar
2 lb. lean fish (haddock, flounder, whiting), cut into chunks
Preparation

In a deep kettle, fry out pork cubes slowly, turning occasionally, until crisp bits remain. Remove these to use later. In the hot fat, fry onions slowly until soft and golden. Add 6 cups cold water, potatoes, seasonings and vinegar. Boil until potatoes are half done. Add fish chunks. Continue cooking gently until fish is tender. Add the browned bits of pork.
