Jackie'S Low-Cal Chicken Cacciatore - cooking recipe

Ingredients
    2 lb. chicken breasts
    1 1/2 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. vegetable oil
    1 (12 oz.) can tomatoes
    2 medium sized onions, sliced
    1 clove garlic, minced
    4 Tbsp. water or dry red wine
    2 medium sized green peppers, cut in strips
Preparation
    Cut meat into serving size pieces.
    Sprinkle with salt.
    Heat oil in large skillet.
    Add meat and cook; drain fat.
    Add tomatoes, onions, garlic and water or wine.
    Cover and simmer 1 1/2 hours or until meat is just tender.
    Add green peppers and cook 15 minutes longer.
    Skim fat; simmer sauce to thicken.
    Makes 6 to 8 servings at about 202 calories or less.
    To reduce calories, add more tomatoes and peppers.
