Mincemeat Fruit Cake - cooking recipe
Ingredients

1 c. firmly packed light brown sugar (or raw)
2 eggs, separated
2 c. mincemeat
2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
1 c. chopped pitted dates
1/4 c. rum (optional)
Preparation

Cream sugar with shortening, then beat in egg yolks.
Beat well, then stir in mincemeat.
Stir flour with the baking soda and salt.
Combine with dates and nuts, then add to batter.
Mix well and fold in stiffly beaten egg whites.
Turn into a large bread tin which has been greased and lined with waxed paper.
Bake at 300\u00b0
for about 1 1/2 hours.
Cool on wire rack thoroughly before slicing.
Serves 8 to 10.
