Chicken Curry - cooking recipe

Ingredients
    1 (3 to 4 lb.) chicken, cut up into bite-size pieces
    1 medium onion, sliced
    2 cloves minced garlic
    1 tsp. ground turmeric
    1 Tbsp. ground cumin
    2 Tbsp. curry powder
    3 Tbsp. oil
    salt and pepper to taste
    1 c. diced potatoes
    eggplant or squash (optional)
Preparation
    Place cut up
    chicken
    in
    large bowl, add 1 tablespoon curry powder, garlic, salt, pepper and turmeric.\tMix well and let sit overnight
    in refrigerator or for 2 hours minimum.\tIn heavy pot, add oil
    making
    sure
    that the sides of the pot is coated.
    When oil
    is
    hot,
    add\tthe
    remaining 2 tablespoons curry powder and the
    ground cumin.\tCook over high heat for 1 minute, stirring constantly.
    Add chicken, stirring to prevent sticking to the pot.
    When\tchicken
    is
    slightly
    brown, add onion and optional vegetables.
    Add
    1
    to
    3\ttablespoons of water if necessary. Cook
    gently
    until
    chicken
    is
    tender. Serve over rice.
