Couscous Salad - cooking recipe

Ingredients
    2 c. water
    1 1/2 tsp. salt
    2 c. couscous (African pasta)
    1 small red onion, diced
    2 small cucumbers, seeded and diced
    3/4 c. currants, drained or raisins
    1/2 c. chopped flat leaf parsley
Preparation
    Bring water to boil.
    Stir in salt and add couscous.
    Remove pan from heat and cover.
    Let stand 5 minutes.
    Transfer couscous to a large bowl and break up any clumps.
    Toss couscous with remaining ingredients.
    Add couscous dressing and mix well.
