Coconut Cream Pie - cooking recipe
Ingredients

1 c. sugar
1/4 c. flour
2 egg yolks
2 c. milk (I use 1/2 c. Pet milk and 1 1/2 c. whole milk)
1/2 stick margarine
1 tsp. vanilla extract
1 (6 oz.) pkg. frozen coconut
Preparation

Blend together sugar and flour.
Beat egg yolks.
Add a little milk to them.
Add this to sugar and flour.
Add remainder of milk and stir well.
Add margarine.
Place in large microwave bowl and cook in microwave on High for 2 minute intervals until thick. Stir well between cooking intervals.
When thick, add vanilla and coconut. Pour into baked 8-inch pie shell.
