Mexican Chicken & Rice - cooking recipe
Ingredients

1 tbsp. Oil
1 lb. Chicken Breast
1 Onion
1 Pepper
1 can Whole Kernel Corn
1 can Chicken Broth
1 c. mild Salsa
1 1/2 c. Rice
1 c. Cheddar Cheese
Preparation

Heat oil in large skillet on medium high heat.
Add chicken, onion and pepper.
Cook and stir until chicken is cooked through. Add corn, broth and salsa.
Bring to a boil.
Stir in rice and cover.
Remove from heat and sprinkle cheese on top.
