Rice And Vegetable Bake - cooking recipe

Ingredients
    1/2 c. long grain rice
    1 small yellow onion
    1 small red pepper
    1 stalk celery
    small bunch of parsley
    1/3 c. walnuts or pecans
    3 Tbsp. butter or margarine
    3 eggs
    1 c. milk
    a dash of salt and pepper
Preparation
    Cook rice according to package directions. Peel and chop onion. Rinse the red pepper.
    Remove seeds to dice.
    Coarsely chop celery and parsley. Chop nuts. Combine cooked rice with vegetables and nuts.
    In saucepan, melt butter.
    In a bowl, beat eggs and milk.
    Season with salt and pepper. Add melted butter. Stir to combine.
    Pour egg mixture over rice mixture. Blend well.
    Place mixture in a lightly greased baking pan or a tube pan. Bake at 350\u00b0 for 1 hour.
