Orange Candied Sweet Potatoes - cooking recipe

Ingredients

6 medium size potatoes
1/2 tsp. grated orange rind
1 c. sugar
1/2 tsp. salt
1 c. orange juice
1 c. water
1/2 c. butter
1 (1 lb.) pkg. miniature marshmallows

Preparation

Peel and slice sweet potatoes in 1/4-inch slices and arrange in a buttered baking dish.
Make syrup by combining sugar, orange juice, salt, orange rind and water.
Pour over the potatoes. Cover and bake in a 350\u00b0 oven for 30 minutes or until tender. Baste occasionally.
Uncover the last 10 minutes and allow to brown.
Layer with miniature marshmallows and brown just before removing from oven.
Serves 6.
