Chocolate Mint Souffle - cooking recipe
Ingredients

2 tsp. sugar
2 tsp. flour
3/4 c. milk
1 egg, slightly beaten
2 sq. (2 oz.) sweet baking chocolate
2 Tbsp. white creme de menthe
6 egg whites, stiffly beaten
butter
granulated sugar
Preparation

Combine 2 teaspoons sugar and flour in saucepan.
Gradually stir in milk, mixing well.
Stir in egg and egg yolk and cook over low heat until thickened, stirring constantly.
Cool.
Melt chocolate in creme de menthe.
Stir into egg mixture.
Fold in stiffly beaten egg whites.
Spoon into 4 (8 ounce) souffle cups which have been lightly buttered and sprinkled with granulated sugar.
Bake in a pan of hot water at 350\u00b0 for 20 minutes or until souffle tests done (a silver knife inserted in center comes out clean when done).
Serve at once.
Yields 4 servings.
