Arroz Con Pollo - cooking recipe
Ingredients

2 1/2 lb. chicken, cut up
1/4 lb. ham or bacon, cut up
1 c. rice
1 onion
1 bay leaf, crumbled
2 1/2 c. chicken broth
1/4 tsp. saffron
1/4 c. olive oil
1 bunch scallions, chopped
1 can pimentos
2 tsp. parsley
Preparation

Brown floured and salted chicken in olive oil.
Set aside in warm place.
Add ham, onion, scallions and saute for few minutes. Add rice and spices.
Blend for few minutes and add chicken broth; salt to taste.
Cook on stove for about 10 minutes.
Place rice mixture and chicken in casserole and cook in 350\u00b0 oven for 30 minutes or until rice is tender.
