Diabetic Icebox Cookies - cooking recipe

Ingredients
    1 c. butter
    1 egg, well beaten
    2 1/2 c. flour, sifted
    3 (1/4-grain) saccharin tablets
    1 tsp. vanilla extract
    cinnamon to taste (optional)
Preparation
    Cream butter until light.
    Add egg; mix well.
    Add flour; blend thoroughly.
    Dissolve saccharin in 1/2 teaspoon water.
    Add vanilla and saccharin to flour mixture; mix well.
    Form into two 8-inch long rolls.
    Wrap in waxed paper; refrigerate overnight. Slice 1/4-inch thick; place on greased cookie sheet.
    Sprinkle lightly with cinnamon.
    Bake at 350\u00b0 for 8 to 10 minutes, or until browned.
