Company Carrots - cooking recipe

Ingredients
    12 carrots, cut into 3-inch long strips and cooked until tender (save water)
    3/4 c. mayonnaise
    1 Tbsp. grated onion
    1 Tbsp. horseradish
    1/4 c. reserved carrot water
    salt and pepper (lightly)
    1/2 c. cracker or bread crumbs (Ritz taste good)
    1/2 c. grated cheese
Preparation
    Combine carrots, mayonnaise, onion, carrot water and horseradish.
    Add salt and pepper to taste.
    Top with crumbs and cheese.
    Bake, uncovered, at 375\u00b0 for 20 minutes.
