Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. vegetable oil
    1 tsp. cinnamon
    1 tsp. vanilla
    1 c. chopped nuts
    2 c. sugar
    2 c. zucchini
    2 c. self-rising flour
Preparation
    Beat eggs, sugar and vegetable oil.
    Stir in grated zucchini. Mix in flour and cinnamon.
    Fold in chopped nuts.
    Bake at 300\u00b0 for about 1 hour in loaf pans.
    Let cool before slicing.
    Makes 2 or 3 loaves in 4 1/2 x 8 1/2-inch pans.
