Apricot Mochi - cooking recipe

Ingredients
    1 box mochiko or 3 1/2 c.
    2 (3 oz.) boxes apricot flavored Jell-O
    2 c. sugar
    12 oz. can apricot nectar
    12 oz. can water
Preparation
    Mix all ingredients together well.
    Pour into a greased 9 x 13-inch baking pan.
    Cover tightly with tinfoil and bake 55 to 60 minutes at 350\u00b0.
    Remove from oven and after 15 minutes, remove tinfoil.
    Cool for several hours; cut into bite size pieces and roll in potato starch or kinako (soybean flour).
    Shake off excess starch.
    Makes 48 servings.
