Cherry Vanilla Fudge - cooking recipe
Ingredients

3 c. sugar
1/2 tsp. salt
1 c. light cream or evaporated milk
1/2 c. milk
1/4 c. light corn syrup
2 Tbsp. butter or margarine
2 tsp. vanilla
1 c. red and green glace candied cherries, cut in quarters (do not use maraschino cherries)
Preparation

Combine sugar, salt, cream, milk, corn syrup and butter in large heavy saucepan or skillet.
Cook over medium heat, stirring constantly until mixture comes to a boil.
Continue cooking, stirring occasionally until candy thermometer reaches 238\u00b0 (soft ball stage).
Remove from heat and cool (100\u00b0).
Add vanilla. Beat briskly until fudge thickens and begins to lose its gloss. Stir in cherries.
Pour into buttered 8-inch square pan.
Cool and cut into squares when firm.
This fudge is pretty to serve at Christmastime.
Makes 1 3/4 pounds.
