Microwave Zucchini Casserole - cooking recipe

Ingredients
    4 c. zucchini, peeled and cut into chunks
    1/2 medium onion, thinly sliced
    4 eggs, beaten
    6 oz. (1 1/2 c.) shredded Cheddar cheese
    2 oz. pimento, drained
    salt and pepper to taste
Preparation
    Bake zucchini and onion in a greased 10 x 6 x 2-inch microwave dish covered with plastic wrap; turn back corner to vent. Microwave on High for 7 minutes.
    Add remaining ingredients; cover with paper towel and microwave on Medium-high for 8 to 10 minutes. Stir after 3 to 4 minutes.
