Mexican Rice - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/4 c. diced carrot
    2 cloves garlic, minced
    1 Tbsp. oil
    3/4 c. long grain rice
    1/2 c. water
    1/2 c. picante sauce
    1 (10 oz.) can diced tomatoes and green chilies
Preparation
    In medium saucepan, saute onion, carrot and garlic in oil for 3 minutes.
    Add rice; cook and stir 1 minute.
    Stir in water, picante sauce and diced tomatoes and green chilies.
    Cover; reduce heat to low.
    Simmer for 20 to 25 minutes, or until all liquid is absorbed and rice is tender.
    Let stand, covered, for 5 minutes. Serves 4.
